Ingredients
- ¾ tbsp butter
- ½ onion
- ½ tsp curry powder
- 1 cup chicken broth
- ½ pkg frozen broccoli (10oz pkg) or 5oz fresh broccoli steamed
- sour cream
- chopped salted peanuts
Instructions
- Melt butter on medium heat, add onion and curry powder ~ cook until onion is limp
- Add broth and broccoli, cook covered about 5 minutes, until everything is heated through
- Add soup to a blender or food processor a little at a time until everything is smooth.
- Serve hot or cold, top with a dollop of sour cream and a some peanuts
