Mediterranean Mosaic is a vibrant blend of beans, fresh veggies, and cheese, all tossed in an herby Italian-style dressing. It’s a protein-packed, no-lettuce-needed salad perfect for make-ahead lunches or a quick solo bite.
Ingredients
- ¼ can garbanzo beans 4oz drained
- ¼ can kidney beans 4oz drained
- ¾ cup cauliflower broken down into tiny florets or 1/2" thick slices
- ½ zucchini 3oz sliced 1/4" thick
- 1.2 red onion sliced thin
- 4 oz cheese jack or Swiss – matchstick pieces
- Italian Dressing
Instructions
- Add everything except cheese to bowl and mix. Place in fridge for a minimum of 1 hour to let the flavors meld. Just before service, add cheese and stir
