Niçoise Supper Salad

Ingredients
- butter lettuce enough to line plate
- 1 packet tuna the single serve packs
- 1 hard boiled egg cut into wedges
- ½ tomato cut into wedges
- ½ bell pepper sliced thin
- ¼ red onion sliced thin
- ½ stalk celery sliced thin
- ¼ cup olives sliced thin
- 2 mushrooms sliced thin
- ½ jar artichoke hearts
- ¼ can baby corn
- Pita Bread optional if you want to pack this in like a sandwich
Niçoise Dressing
- 1 tsp anchovy paste
- 1 tsp Dijon
- 1 ½ tbsp wine vinegar
- 2 ½ tbsp olive oil
Instructions
- Line plate with butter lettuce
- Place the tuna in the center of the plate
- Place each ingredient in it's own section of the plate surrounding the tuna
- Mix the dressing well and then adequately dress each veggie and tuna as needed
