Grab your quiche crust because this is a cheese pie with a little something extra, diced green chiles. Sour cream, green chiles and 2 cheeses come together to make this special. It’s best with a green salad that has cherry tomatoes and avocados with a southwestern ranch dressing.

Cheesy Chile Quiche
Cheesy Chile Quiche takes a buttery quiche crust then fill it with caramelized onions, diced green chiles, eggs and cheese for a delicious dish
Ingredients
- 1 quiche crust recipe already in ramekin and blind baked if doing that
- 1 tbsp butter
- ½ onion thinly sliced
- ½ cup sour cream
- 1 egg
- dash salt
- 2 tbsp diced green chiles
- ā cup cheese Jack, Cheddar or both
Instructions
- Melt butter in pan over medium heat
- Add onions, flipping to get them covered in the butter, fry them till limp and slightly caramelized, flipping them regularly (about 8-10 minutes) Removed from heat and let cool a little
- In a bowl, beat together egg, sour cream and salt
- Stir in chiles then onions, then 2/3 of the cheese
- Fill shell, bake at 350 for 20 minutes or until it barely jiggles when shook
- Top with remaining cheese and bake just until melted 2-3 minutes more
