This ain’t your everyday omelet. The Country Omelet is a skillet-loaded, open-faced powerhouse filled with crispy bacon, tender potato, Swiss cheese, walnuts, and a dollop of sour cream for good measure. It’s rustic, hearty, and absolutely solo-cook approved. Whether you’re whipping this up for breakfast, brunch, or brinner, it’s a comforting dish with texture, flavor, and that oh-yeah-I-cooked-that satisfaction—all in one pan.

Country Omelet
Couple of eggs, some bacon, walnuts, onions, potato, Swiss cheese and a dollop of sour cream come together to make something hearty and amazing no matter the time of day.
Ingredients
- 2 slices bacon
- ÂĽ cup walnuts
- 1 new potato diced
- â…› cup onion diced
- 1 tbsp butter
- 2 eggs whisked up
- â…› cup Swiss cheese diced
- â…› cup Swiss cheese shredded
- ½ tbsp parsley
- â…› cup sour cream
Instructions
- Fry bacon, till brown and crispy, set aside, crumble, leave grease in pan
- Add walnuts to pan and fry till slightly browned and softened (10 ish minutes), set aside, leave grease
- Add potato and onion, cook until everything is slightly browned, set aside, wipe pan clean
- Melt butter in the pan, add eggs, keep them movin so top can get to the bottom to cook even
- Once nearly done, add diced Swiss cheese, give it a couple minutes
- Add everything back to pan in any way you'd like
- Slip eggs out to plate, slip it out before you add everything back or eat out of the pan ~ no judgement here 🙂
- Top with a dollop of sour cream
