Onion Souffle
Souffles are the aristocrats of the egg world and they're much easier that people believe. This savory onion souffle has a mild flavor and goes well with meat or fish
Ingredients
Instructions
- Heat oven to 375°
- Melt butter over medium heat, add onion and cook until soft and slightly caramelized
- Stir in flour, salt, thyme and pepper and stir until thickened creating a roux
- Remove from heat and gradually stir in milk until thickened
- Put into blender or food processor and process until smooth
- Mix in egg yolks
- Heat, stirring, until thick again
- Remove from heat
- Whip egg whites to moist but firm peaks
- Carefully fold the whites into the onion and egg mixture
- Pour into a greased ramekin and bake 20 minutes
