Instructions
Heat oven to 375°
Melt butter over medium heat, add onion and cook until soft and slightly caramelized
Stir in flour, salt, thyme and pepper and stir until thickened creating a roux
Remove from heat and gradually stir in milk until thickened
Put into blender or food processor and process until smooth
Mix in egg yolks
Heat, stirring, until thick again
Remove from heat
Whip egg whites to moist but firm peaks
Carefully fold the whites into the onion and egg mixture
Pour into a greased ramekin and bake 20 minutes
