Souffles are the aristocrats of the egg world and they're much easier that people believe. This savory onion souffle has a mild flavor and goes well with meat or fish

  • Heat oven to 375°
  • Melt butter over medium heat, add onion and cook until soft and slightly caramelized
  • Stir in flour, salt, thyme and pepper and stir until thickened creating a roux
  • Remove from heat and gradually stir in milk until thickened
  • Put into blender or food processor and process until smooth
  • Mix in egg yolks
  • Heat, stirring, until thick again
  • Remove from heat
  • Whip egg whites to moist but firm peaks
  • Carefully fold the whites into the onion and egg mixture
  • Pour into a greased ramekin and bake 20 minutes
