Yes, you read that right, pizza from eggs. The scrambled eggs give this a fluffy crust instead of bready and heavy. This is a super quick light supper. Pair it with a salad (I prefer my 3 Bean with this), some breadsticks and you have a super quick supper for nights when you just don’t want to cook or for when you’re looking to clean out the fridge of bits and bobs leftovers.

Scrambled Egg Pizza
Scrambled Egg Pizza is the perfect answer to quick suppers or fridge cleanouts. The scrambled eggs give the perfect crust and whatever savory toppings you choose fill in the rest. Make it yours.
Equipment
- Pan oven safe
Ingredients
- 2 eggs
- 2 tbsp sour cream
- ā tsp salt
- dash pepper
- ā tsp hot sauce add more if you like (LOL I do)
- ¾ tbsp butter
- ½ tsp oregano
- 2 tbsp Swiss cheese shredded
- 2 tbsp parmesan cheese shredded
Instructions
- Beat together, eggs, sour cream, salt, pepper, hot sauce of choice
- Melt butter in an oven safe pan
- Add eggs and keep the bottom moving to allow the top to get under and cook evenly. Add oregano
- When nearly done, add cheese and put under broiler for a couple minutes to melt the cheese and finish off the egg
- Move onto plate — or serve straight from the pan, no judgement here
- Add toppings of choice
