Instructions
Beat together, eggs, sour cream, salt, pepper, hot sauce of choice
Melt butter in an oven safe pan
Add eggs and keep the bottom moving to allow the top to get under and cook evenly. Add oregano
When nearly done, add cheese and put under broiler for a couple minutes to melt the cheese and finish off the egg
Move onto plate -- or serve straight from the pan, no judgement here
Add toppings of choice
