Strawberry Shortcake

- Pastry Brush optional
- Biscuit Cutter optional
Ingredients
Biscuits
- ½ cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp lemon zest
- ÂĽ tsp cinnamon
- ÂĽ tsp salt
- 2 tbsp butter softened
- 2 tbsp heavy cream or milk
Biscuit Tops before baking
- 2 tsp heavy cream
- 2 tsp sugar for sprinkling
Strawberries & Cream
- ÂĽ cup heavy cream
- ½ tbsp powdered sugar
- ÂĽ tsp vanilla
- 5 strawberries sliced thin
Instructions
Biscuits
- Preheat over to 400°
- Stir together flour, sugar, baking powder, lemon zest, cinnamon and salt
- Add butter and mix into dry until mix is crumbly
- Add cream (or milk) and mix till dough comes together into a ball
- Using hand flatten out dough to about 1/4" thick,
- Using a regular drinking glass or a 3" biscuit cutter, press down but do not twist and cut out first biscuit
- Gather up remaining dough into a ball and flatten out again, you should have a near perfect 2nd biscuit
- Lay biscuits on baking tray, brush with a little cream and sprinkle with sugar — if you don't have a pastry brush you can sprinkle a little cream on the biscuits with a spoon then use the back of the spoon to spread it around
- Bake for 12-15 minutes, until golden
- When done, let cool about 5 minutes then feel free to cut open to help quicken cooling
- Mix cream, powdered sugar and vanilla
- Once biscuits have cooled, put whip cream on top then berries, it's up to you if you're an open face or a stacker 🙂
