Spice Cake

Ingredients
- 1 tbsp butter
- 3 tbsp brown sugar
- 1 tbsp applesauce
- 1 tbsp extra virgin olive oil
- ⅛ tsp vanilla
- 3 tbsp flour
- ½ tsp cinnamon
- ¼ tsp ginger
- ⅛ tsp cardamom
- ⅛ tsp nutmeg
- ⅛ tsp clove
- ⅛ tsp baking powder
- ⅛ tsp salt
- 1 tbsp milk
Cream Cheese Frosting - optional
- 1 oz cream cheese softened
- 1 tbsp powdered sugar
Instructions
- Preheat oven to 350℉
- Cream together butter and sugar till smooth
- Whisk in applesauce, oil and vanilla
- In a separate bowl stir together all the dry ingredients until well combined (flour, cinnamon, ginger, nutmeg, cardamom, clove, baking powder, salt)
- Add dry to wet and mix thoroughly until smooth
- Whisk in milk
- Pour into prepared ramekin and bake for 30-35 minutes, until a toothpick comes out clean.
Cream Cheese Frosting
- Cool cake until warm and easily touched with hands then frost
- Stir cream cheese and powdered sugar together until thoroughly combined and total smooth with no sugar clumps showing in cream cheese
