Strawberry Icebox Cake
the perfect dessert for when you don't want to bake, great for spring and summer when strawberries are abundant
Ingredients
- ¾ cup heavy cream
- 2 tbsp powdered sugar
- ½ tsp vanilla
- 5 strawberries hulled and sliced
Cookie Options
- 2 sheets graham crackers
- 10 vanilla wafers
Instructions
- Whip together cream, sugar and vanilla
- Place a layer of cookie pieces on bottom of ramekin, breaking them up as needed to get full coverage
- Add a layer of whipped cream
- Add a layer of berry slices
- Continue cookie, cream, berry layers finishing with berries
- Cover with plastic wrap and refrigerate at least 4 hours
